This week has been hectic with planning and organizing for work but now everything is done and I can finally breathe. I was so exhausted last night I got home from work and passed out. Now I finally have my groove back and can get back to school, blogging & cooking.
After work today I had a snack before my Week 2 of C25K:

oh and a slice of bread I forgot to photograph. I am relaxing for the remainder of the night and maybe doing some homework….hmm maybe not.

That zebra tomato looks SO awesome! I’ve never had one; do they taste the same? I think I choose foods solely based on appearance sometimes… 😛

It is really easy just paper thin tomatoes sprinkled with salt and pepper and topped with greens, reduced balsamic and just a little olive oil. To reduce the balsamic i take about 1/2 cup in a small sauce pan bring to a boil and then reduce to a simmer until it has reduced by half. Then remove from the pot and set aside to cool slightly and then drizzle over. Reducing the balsamic makes it thick and super sweet it is delicious.
