  1. I certainly have had my fair share of bagels, being from NY, and I used to LOVE lox with capers and cream cheese. Yours certainly do look like the real thing. I try not to eat either much anymore, but when I get a real hankering for bagels, I like onion bagels with Tofutti and tomato or cinnamon-raisin bagels with Tofutti and banana. There are also so many “cream cheese” options here that sometimes I just like a plain bagel with some flavored cream cheese. Nice idea to add the capers.
    So how would you compare Galaxy cream cheese to Tofutti?

  2. Wow you sure did fool me!! I really thought that was lox! I love a good bagel (everything bagels are my #1, but my local bagel shop makes an awesome multigrain that I’ve been addicted to) with cream cheese. My favorite toppings (and basically the only way I’ll eat bagels now..) is with a healthy spread of vegan cream cheese (my fav is Tofutti) with slices of tomato and cucumber. Topped with freshly ground pepper and sea salt. Yummm. I wish I had some bagels right now!

  3. As a New Yorker these are talking to me like no other. I am going to be having these for breakfast for sure. Just need to go get some bagels now (which will not measure up to New York, but hey they will taste great with those items on there.

    I am so excited. Thanks for creating this ingenious idea.

    Those look very much like salmon at 1st glance before I read I though it was.
    They look like they would be very good. How did you like the cream cheese?

    This looks really good! I’m going to try this w/ thinkly sliced roasted red peppers instead of the tomatoes… the texture and taste of roasted red peppers will probably be damn close to smoked salmon!

    Or better yet, grill the red pepper and/or tomatoes with a little smoking wood. Not too much, I think, so you don’t kill the essence of the veg. One of those stove top smokers would probably be great for this. A little smoked paprika maybe.

  7. this looks GOOOOOD. before I clicked over I was wondering HOW did you DO that?? totally looks like lox!

    I love THIS as a bagel topping! this exact combination is what I usually crave when I want a bagel sandwich!
